Authentic Rogan Josh Recipe: Rich and Flavorful Indian Lamb Curry

Ingredients:

  • 2 lbs lamb, cut into pieces
  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup yogurt
  • 2 teaspoons Kashmiri chili powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 2 cups water
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Heat oil in a large pot over medium heat. Add onions, garlic, and ginger; sauté until onions are golden.
  2. Add lamb pieces and brown on all sides.
  3. Mix in all the spices except garam masala, and stir well.
  4. Reduce heat to low, add yogurt, and mix thoroughly. Cook for 5 minutes.
  5. Add water, cover, and simmer for 1-2 hours or until lamb is tender.
  6. Stir in garam masala and simmer for another 10 minutes.
  7. Garnish with cilantro and serve with basmati rice or naan.
