Baida Roti Recipe: Crispy Indian Egg and Minced Meat Flatbread

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tbsp oil
  • Water as needed (for dough)
  • 250g minced lamb or chicken
  • 2 eggs
  • 1 onion (finely chopped)
  • 2 green chilies (finely chopped)
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp cumin powder
  • 1 tbsp ginger-garlic paste
  • Salt to taste
  • Oil for cooking

Instructions:

  1. Prepare Dough: Mix flour, salt, and oil. Add water gradually to form a soft dough. Rest for 30 minutes.
  2. Cook Mince: Heat oil in a pan, sauté onions till golden. Add ginger-garlic paste, green chilies, and spices. Add minced meat and cook until done. Set aside.
  3. Roll Parathas: Divide dough into balls, roll each into thin discs.
  4. Assemble: Heat a pan, place rolled dough, spread a beaten egg over it, and add cooked mince on one side. Fold the paratha from all sides to form a square.
  5. Cook Until Crisp: Drizzle oil around the roti and cook until golden and crisp on both sides.
  6. Serve Hot with mint chutney or ketchup.
