Ingredients:

1 ½ cups brown sugar

½ cup corn syrup

2 eggs

¼ cup unsalted butter, melted

1 tsp vanilla extract

1 cup raisins or chopped pecans (optional)

12 unbaked tart shells
Instructions:

Preheat your oven to 400°F (200°C).

In a bowl, whisk together the brown sugar, corn syrup, eggs, butter, and vanilla until smooth.

Stir in raisins or pecans if using.

Place the tart shells on a baking tray. Pour filling evenly into each shell, filling about two-thirds full.

Bake for 15-20 minutes until the filling is bubbling and the pastry is golden.

Let cool before removing from the tray. Serve slightly warm or fully cooled.
