Classic Gajar Halwa to Sweeten the New Year

Ingredients:

  • 4 cups grated carrots
  • 2 cups milk
  • 1 cup sugar
  • 2 tbsp ghee
  • ½ tsp cardamom powder
  • 10-12 cashews, chopped
  • 10-12 raisins

Instructions:

  1. In a heavy-bottomed pan, heat ghee and add grated carrots. Sauté for 5-7 minutes until they soften.
  2. Pour in the milk and cook on low heat until the milk is absorbed, stirring occasionally.
  3. Add sugar and cardamom powder and cook until the halwa thickens and leaves the sides of the pan.
  4. Garnish with cashews and raisins, and serve warm.
