Ingredients:
- 500g lamb stew meat, cubed
- 2 tbsp oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp chili powder
- 1 can (400ml) coconut milk
- 2 cups beef or chicken broth
- 2 carrots, chopped
- 2 potatoes, diced
- 1 bell pepper, chopped
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Heat the oil in a large pot and brown the lamb stew meat. Remove and set aside.
- In the same pot, add the cumin seeds. When they start to sizzle, add the chopped onions and sauté until golden brown.
- Add the minced garlic and grated ginger, and sauté for another minute.
- Add the coriander powder, turmeric powder, garam masala, and chili powder, and cook for a few seconds until fragrant.
- Return the lamb to the pot and add the coconut milk and broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add the chopped carrots, potatoes, and bell pepper. Simmer for another 30 minutes until the vegetables and meat are tender.
- Add salt to taste.
- Garnish with fresh cilantro and serve hot.
