Ingredients:

  • 2 packs ramen noodles
  • 1 cup coconut milk
  • 1 tbsp curry paste
  • 1/2 cup mixed vegetables (carrots, beans, etc.)
  • 1 tbsp soy sauce
  • Lime and cilantro for garnish

Instructions:

  1. Cook ramen as per instructions.
  2. In a separate pan, simmer coconut milk with curry paste and soy sauce. Add vegetables.
  3. Toss cooked noodles in the curry sauce. Garnish with lime and cilantro.
