  • 1 tbsp lemon juice
  • 1 tsp sugar
  • 1/2 tsp salt

For assembling:

  • Mini slider buns
  • Lettuce
  • Tamarind chutney or mint chutney
  • Butter for toasting buns

The spicy mayo adds a creamy kick. Mix mayonnaise with hot sauce, garlic powder, lime juice, black pepper, and a small spoon of mint chutney. For a lighter version, use Greek yogurt instead of mayo. The pickled onions are simple but important. Soak thinly sliced onions in vinegar, sugar, salt, and lemon juice for at least fifteen minutes to create a sharp topping that cuts through the richness of the potato patty.
