Crispy Masala Dosa: A South Indian Favorite with a Spicy Twist!

Ingredients (for Batter):

  • 2 cups rice
  • 1 cup urad dal (split black gram)
  • 1 tsp fenugreek seeds
  • Water as needed
  • Salt to taste

Ingredients (for Filling):

  • 4 medium potatoes (boiled and mashed)
  • 1 medium onion (sliced)
  • 1 green chili (chopped)
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 2 tbsp oil
  • Salt to taste

Instructions:

  1. Soak rice, urad dal, and fenugreek seeds for 6 hours. Grind into a smooth batter and ferment overnight.
  2. For filling, heat oil, add mustard seeds, onions, and green chilies. Sauté and add turmeric, salt, and mashed potatoes. Cook for 5 minutes.
  3. Spread dosa batter on a hot tawa, cook until crispy. Place filling inside, fold, and serve with chutney and sambar.
