Ingredients (for Batter):
- 2 cups rice
- 1 cup urad dal (split black gram)
- 1 tsp fenugreek seeds
- Water as needed
- Salt to taste
Ingredients (for Filling):
- 4 medium potatoes (boiled and mashed)
- 1 medium onion (sliced)
- 1 green chili (chopped)
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 2 tbsp oil
- Salt to taste
Instructions:
- Soak rice, urad dal, and fenugreek seeds for 6 hours. Grind into a smooth batter and ferment overnight.
- For filling, heat oil, add mustard seeds, onions, and green chilies. Sauté and add turmeric, salt, and mashed potatoes. Cook for 5 minutes.
- Spread dosa batter on a hot tawa, cook until crispy. Place filling inside, fold, and serve with chutney and sambar.
