4 slices of bread
2 medium potatoes, boiled and mashed
Half cup grated cheese
1 small onion, finely chopped
1 green chili, finely chopped
2 tablespoons fresh coriander, chopped
Half teaspoon cumin powder
Half teaspoon red chili powder
Half teaspoon garam masala
Half teaspoon chaat masala
Quarter teaspoon turmeric powder
Salt to taste
1 tablespoon butter
1 tablespoon oil
Tomato ketchup or green dip for serving

Instructions

Start by boiling the potatoes until they are soft. Peel them and mash them in a bowl while they are still slightly warm. Add chopped onion, green chili, coriander, cumin powder, red chili powder, garam masala, chaat masala, turmeric powder, and salt. Mix everything well until the spices are evenly combined with the potatoes.

Take the bread slices and spread a thin layer of butter on one side of each slice. On the other side, spread a generous layer of the masala potato mixture. Press it gently so it sticks to the bread. Add grated cheese on top of the potato layer.

Heat a tawa or pan on medium heat and add a little oil or butter. Place the bread slices on the pan with the plain buttered side facing down. Cover the pan for one to two minutes so the cheese begins to melt. Keep the heat medium to low so the bread becomes crispy without burning.

Once the bottom is golden and crisp, carefully remove the toast from the pan. You can also flip it for a few seconds if you want the cheese side slightly toasted, but do this carefully so the topping does not fall apart. Cut each toast into halves or triangles.
