Ingredients:
- 2 cups basmati rice
- 1 cup mixed vegetables (carrots, peas, beans, potatoes)
- 1 onion, sliced
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 bay leaf
- 1 cinnamon stick
- 2 cardamom pods
- 1/2 tsp turmeric powder
- 1 tsp biryani masala
- Salt to taste
- Fresh coriander and mint for garnish
Instructions:
- Cook rice with bay leaf, cinnamon, and cardamom; set aside.
- In a pan, heat oil and sauté onions until golden.
- Add ginger-garlic paste, followed by tomatoes, turmeric, and biryani masala.
- Add mixed vegetables and cook for 5-7 minutes.
- Layer the vegetable mix and rice in a pot, cover, and let it cook on low heat for 10 minutes.
- Garnish with fresh coriander and mint before serving.
