Ingredients for Methi Thepla:
- 1 cup whole wheat flour
- ½ cup fresh fenugreek leaves (methi), finely chopped
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 tsp cumin seeds
- Salt to taste
- Water as needed
- 2 tbsp oil (plus more for cooking)
Ingredients for Green Chili Chutney:
- 4-5 green chilies
- 1 small bunch of coriander leaves
- 1 clove garlic
- Salt to taste
- Juice of 1 lime
Instructions:
- Prepare the Thepla Dough:
- In a mixing bowl, combine wheat flour, fenugreek leaves, turmeric powder, chili powder, cumin seeds, salt, and 2 tbsp oil.
- Gradually add water and knead to form a soft dough. Cover and let it rest for 10-15 minutes.
- Make the Theplas:
- Divide the dough into small balls and roll each ball into a thin circle.
- Heat a tawa (griddle) and cook each thepla, drizzling a little oil on both sides, until golden and slightly crispy.
- Prepare Green Chili Chutney:
- In a blender, add green chilies, coriander leaves, garlic, salt, and lime juice. Blend until smooth.
- Serve the chutney alongside theplas for a spicy, flavorful meal.
