Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times!
One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to.
Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily. This is a Sanjeev Kapoor recipe.
Ingredients:
• Chicken wings 16
• Pineapple chopped 2 slices
• Garlic chopped 3 cloves
• Black peppercorns crushed 1/2 teaspoon
• Fresh red chillies sliced 2
• Brown sugar 1 tablespoon
• Soy sauce 2 tablespoons
• Lemon juice 1 tablespoon
• Salt to taste
• Tamarind 1 tablespoon
• Oil 3 tablespoons
• Pineapple juice 2 tablespoons
• Pineapple 5-6 slices
• Pineapple juice 1 cup
• Brown sugar 1 tablespoon
• Salt to taste
• Cornflour/ corn starch 1 tablespoon
Method
Clean, wash and trim chicken wings. Finely chop pineapple slices.
Peel, wash and finely chop garlic. Crush peppercorns. Remove stems, wash and slice fresh red chillies. Blend together chopped pineapple, garlic, brown sugar, soy sauce, crushed peppercorns, fresh red chillies, lemon juice, salt and blend till smooth. Add tamarind pulp, one tablespoon of oil and mix.
Marinate the chicken wings in this mixture for three hours. Skewer the wings onto wooden (pre soaked) satay sticks.
Heat a tawa (you can also cook in a preheated oven) and pour oil. Place the skewered chicken wings on it and cook on high heat for three to five minutes. Roll over and cook the other side too.
Lower the heat, add pineapple juice and cook till nicely browned.
For the sauce, remove stems, wash and slice fresh red chillies. Roughly chop and blend pineapple slices to make a puree.
Heat a pan. Add pineapple puree, pineapple juice, brown sugar, salt and mix well.
Once the mixture comes to a boil, add cornstarch blended in a little water. Stir and add sliced fresh red chillies and cook on low heat till the sauce thickens.
Serve with the fried chicken wings.
