Ingredients:
- ½ cup basmati rice, soaked
- 4 cups milk
- ½ cup sugar
- 1 pinch saffron threads, soaked in warm milk
- 1 tsp cardamom powder
- 2 tbsp crushed almonds for garnish
Instructions:
- Drain the soaked rice and grind to a coarse paste.
- In a heavy-bottomed pot, bring milk to a boil and add the rice paste, stirring constantly to avoid lumps.
- Once the mixture thickens, add sugar, saffron milk, and cardamom powder.
- Simmer for 10-15 minutes until the phirni reaches a pudding-like consistency.
- Pour into serving bowls, garnish with crushed almonds, and chill before serving.
