Kesar Phirni with Crushed Almonds

Ingredients:

  • ½ cup basmati rice, soaked
  • 4 cups milk
  • ½ cup sugar
  • 1 pinch saffron threads, soaked in warm milk
  • 1 tsp cardamom powder
  • 2 tbsp crushed almonds for garnish

Instructions:

  1. Drain the soaked rice and grind to a coarse paste.
  2. In a heavy-bottomed pot, bring milk to a boil and add the rice paste, stirring constantly to avoid lumps.
  3. Once the mixture thickens, add sugar, saffron milk, and cardamom powder.
  4. Simmer for 10-15 minutes until the phirni reaches a pudding-like consistency.
  5. Pour into serving bowls, garnish with crushed almonds, and chill before serving.
