Mexican Street Corn (Elote) with Chili and Lime

Ingredients:

  • 4 corn cobs

  • ¼ cup mayonnaise

  • ¼ cup sour cream

  • ½ cup Cotija cheese (crumbled)

  • 1 tsp chili powder

  • 1 lime (cut into wedges)

  • Chopped cilantro (optional)

Instructions:

  1. Grill corn until slightly charred.

  2. Mix mayo and sour cream, then spread over corn.

  3. Sprinkle cheese and chili powder on top.

  4. Squeeze lime and add cilantro if desired.
