Moroccan Couscous with Roasted Vegetables and Harissa

Ingredients:

  • 1 cup couscous

  • 1½ cups boiling water

  • 1 zucchini (cubed)

  • 1 carrot (cubed)

  • 1 red onion (sliced)

  • 1 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp paprika

  • Salt to taste

  • 1 tbsp harissa paste

  • Lemon wedges for serving

Instructions:

  1. Toss veggies in oil, cumin, paprika, and salt. Roast at 400°F for 25 minutes.

  2. Pour boiling water over couscous. Cover and let sit for 5 minutes.

  3. Fluff couscous with a fork, then mix in roasted veggies and harissa.

  4. Serve warm with lemon wedges.
