Ingredients:

1 cup couscous

1½ cups boiling water

1 zucchini (cubed)

1 carrot (cubed)

1 red onion (sliced)

1 tbsp olive oil
-
1 tsp cumin
-
1 tsp paprika
-
Salt to taste

1 tbsp harissa paste
-
Lemon wedges for serving
Instructions:

Toss veggies in oil, cumin, paprika, and salt. Roast at 400°F for 25 minutes.

Pour boiling water over couscous. Cover and let sit for 5 minutes.

Fluff couscous with a fork, then mix in roasted veggies and harissa.

Serve warm with lemon wedges.
