Recipe:

Ingredients:

  • 1 cup urad dal (split black gram)

  • ¾ cup desi ghee

  • ¾ cup jaggery or powdered sugar

  • ¼ cup almonds, chopped

  • ¼ cup cashews, chopped

  • 1 tsp cardamom powder

  • 1 tbsp edible gum (optional)

Instructions:

  1. Dry roast the urad dal on low flame till golden and aromatic. Cool and grind into a coarse powder.

  2. In a pan, heat ghee and fry the edible gum (if using) until it puffs. Remove and crush.

  3. Add ground dal to the ghee and roast on low flame for 10–12 minutes till the raw smell disappears.

  4. Turn off the heat. Add chopped nuts, crushed gum, cardamom powder, and jaggery/sugar. Mix well.

  5. Shape into round laddoo-like balls (pinni). Let them set and cool.

  6. Store in an airtight container.
