Ingredients:
- 1 cup semolina (rava)
- 1 medium onion, finely chopped
- 1 green chili, slit
- 1 tsp mustard seeds
- 1 tsp urad dal
- 8-10 curry leaves
- 2 tbsp ghee or oil
- Salt to taste
- 2 ½ cups water
- Fresh coriander leaves and grated coconut for garnish
Instructions:
- Dry roast the semolina in a pan on low heat until it is golden and aromatic. Set aside.
- Heat ghee in a pan, add mustard seeds, and let them splutter. Add urad dal, curry leaves, and green chili. Sauté for a minute.
- Add chopped onions and cook until translucent.
- Pour in water and salt, and bring it to a boil. Gradually add the roasted semolina, stirring continuously to avoid lumps.
- Cover and cook for 3-4 minutes until the upma is fluffy.
- Garnish with fresh coriander leaves and grated coconut before serving.
