Ingredients:
- 1 pound of pasta (linguine or fettuccine)
- 1 can of diced tomatoes
- 2 cloves of garlic, minced
- 1/4 cup of olive oil
- 1/4 cup of chopped fresh basil
- 1 pound of shrimp, peeled and deveined
- Salt and pepper, to taste
- Red pepper flakes, to taste
- Grated Parmesan cheese, for serving
Instructions:
- Cook the pasta according to the package directions until al dente.
- Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes and cook for 1-2 minutes until fragrant.
- Add the can of diced tomatoes to the skillet and stir well to combine. Season with salt and pepper to taste.
- Simmer the tomato sauce for 10-15 minutes, stirring occasionally, until it has thickened slightly.
- Add the shrimp to the skillet and cook for 3-4 minutes until pink and cooked through.
- When the pasta is done cooking, drain it and add it to the skillet with the tomato and shrimp sauce. Toss well to coat the pasta in the sauce.
- Serve the pasta hot, garnished with chopped fresh basil and grated Parmesan cheese.
