Ingredients:
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt, to taste
- 1 cup cauliflower florets
- 1 cup potatoes, peeled and cubed
- 1/2 cup peas (optional)
- 1/2 cup tomato puree
- 1/4 cup water
- Fresh cilantro, chopped (optional)
Instructions:
- In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and cook until they begin to crackle.
- Add the onions and sauté until they are translucent.
- Add the garlic and ginger and sauté for an additional 1-2 minutes.
- Add the ground cumin, ground coriander, turmeric powder, red chili powder, and garam masala. Cook for 1-2 minutes, or until the spices are fragrant.
- Add the cauliflower, potatoes, peas (if using), tomato puree, water, and salt to taste. Stir well to combine.
- Bring the mixture to a boil, reduce the heat, and cover the pan with a lid. Cook for 10-15 minutes
