Ingredients:
For the chicken:
- 500g chicken breast, cut into strips
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon curry powder

- 1 ripe mango, peeled and pureed

- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/2 cup chopped cilantro (optional for garnish)
- Cooked rice or noodles, for serving
Instructions:
- Prepare the Chicken:
- In a bowl, mix the chicken strips with soy sauce, cornstarch, and curry powder. Let marinate for at least 15 minutes.
- Make the Mango Sauce:
- In another bowl, combine the mango puree, orange juice, lime juice, honey, ginger, allspice, and cayenne pepper. Mix well and set aside.
- Cook the Stir-Fry:
- Heat oil in a large skillet or wok over high heat.
- Add the marinated chicken and stir-fry until browned and cooked through, about 5-6 minutes. Remove from the pan and set aside.
- In the same pan, add more oil if needed, and sauté the bell peppers, onion, and garlic until just tender, about 3-4 minutes.
- Return the chicken to the pan, pour in the mango sauce, and toss everything together. Cook for an additional 2 minutes, or until everything is hot and the sauce is slightly thickened.
- Serve:
- Serve the spiced mango chicken stir-fry over cooked rice or noodles, garnished with chopped cilantro.
