  • 500g chicken breast, cut into strips
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon curry powder

For the mango sauce:

  • 1 ripe mango, peeled and pureed
  • 1/4 cup orange juice
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon cayenne pepper (adjust to taste)

For the stir-fry:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chopped cilantro (optional for garnish)
  • Cooked rice or noodles, for serving

Instructions:

  1. Prepare the Chicken:
    • In a bowl, mix the chicken strips with soy sauce, cornstarch, and curry powder. Let marinate for at least 15 minutes.
  2. Make the Mango Sauce:
    • In another bowl, combine the mango puree, orange juice, lime juice, honey, ginger, allspice, and cayenne pepper. Mix well and set aside.
  3. Cook the Stir-Fry:
    • Heat oil in a large skillet or wok over high heat.
    • Add the marinated chicken and stir-fry until browned and cooked through, about 5-6 minutes. Remove from the pan and set aside.
    • In the same pan, add more oil if needed, and sauté the bell peppers, onion, and garlic until just tender, about 3-4 minutes.
    • Return the chicken to the pan, pour in the mango sauce, and toss everything together. Cook for an additional 2 minutes, or until everything is hot and the sauce is slightly thickened.
  4. Serve:
    • Serve the spiced mango chicken stir-fry over cooked rice or noodles, garnished with chopped cilantro.
