Ingredients for Moong Dal Khichdi:
- ½ cup Basmati rice
- ½ cup split yellow moong dal
- 1 tbsp ghee or oil
- ½ tsp cumin seeds
- 1 tsp turmeric powder
- Salt to taste
- Fresh coriander leaves for garnish
Ingredients for Mint Raita:
- 1 cup yogurt
- 2 tbsp mint leaves, finely chopped
- ½ cucumber, grated
- Salt and black salt to taste
Instructions:
- Prepare the Khichdi:
- Rinse and soak the rice and dal together for 15 minutes. Drain and set aside.
- Heat ghee in a pressure cooker, add cumin seeds and turmeric powder, and let them sizzle.
- Add the rice, dal, salt, and 3 cups of water. Pressure cook for 2 whistles.
- Garnish with fresh coriander leaves.
- Prepare the Mint Raita:
- Whisk yogurt and add chopped mint, grated cucumber, and salt.
- Serve the Mint Raita alongside the Khichdi for a complete meal.
