Thai Red Curry with Tofu and Vegetables
Ingredients:
1 tbsp coconut oil
1 onion, chopped
3 cloves of garlic, minced
1 tbsp red curry paste
1 can (13.5 oz) coconut milk
1 cup vegetable broth
2 tbsp soy sauce
1 tbsp brown sugar
1 tsp grated ginger
1 red bell pepper, sliced
1 cup sliced mushrooms
1 cup baby corn
1 cup sliced bamboo shoots
1 block (14 oz) firm tofu, drained and cubed
1 cup chopped fresh basil leaves
Salt and pepper, to taste
Directions:
In a large pot, heat the coconut oil over medium heat.
Add the onion and garlic and sauté until they are softened, about 3-5 minutes.
Stir in the red curry paste and cook for about 1 minute, until fragrant.
Pour in the coconut milk, vegetable broth, soy sauce, brown sugar, and grated ginger.
Bring the mixture to a simmer and let it cook for a few minutes.
Add the red bell pepper, mushrooms, baby corn, bamboo shoots and tofu.
Simmer for about 10-15 minutes or until the vegetables are tender.
Stir in the basil leaves and season with salt and pepper to taste.
