Ingredients:

  • Rice paper wrappers
  • Cooked shrimp, sliced in half lengthwise
  • Rice vermicelli noodles, cooked and cooled
  • Lettuce leaves
  • Bean sprouts
  • Fresh herbs (mint, cilantro, Thai basil)
  • Sliced cucumber
  • Hoisin sauce and peanut sauce for dipping

Instructions:

  1. Dip a rice paper wrapper into warm water until softened, then place it on a clean surface.
  2. Arrange shrimp, noodles, lettuce, bean sprouts, herbs, and cucumber in the center of the wrapper.
  3. Fold the sides of the wrapper over the filling, then roll it up tightly.
  4. Repeat with the remaining ingredients.
  5. Serve fresh spring rolls with hoisin sauce and peanut sauce for dipping.
