Ingredients:
- Rice paper wrappers
- Cooked shrimp, sliced in half lengthwise
- Rice vermicelli noodles, cooked and cooled
- Lettuce leaves
- Bean sprouts
- Fresh herbs (mint, cilantro, Thai basil)
- Sliced cucumber
- Hoisin sauce and peanut sauce for dipping
Instructions:
- Dip a rice paper wrapper into warm water until softened, then place it on a clean surface.
- Arrange shrimp, noodles, lettuce, bean sprouts, herbs, and cucumber in the center of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it up tightly.
- Repeat with the remaining ingredients.
- Serve fresh spring rolls with hoisin sauce and peanut sauce for dipping.
