Certainly! Here’s a simple and flavorful chicken stir-fry recipe for a quick and delicious dinner:
Ingredients:
For the Marinade:
- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/2 teaspoon freshly ground black pepper
For the Stir-Fry:
- 2 tablespoons vegetable oil (such as canola or peanut oil)
- 3 cloves garlic, minced
- 1-inch piece of fresh ginger, minced or grated
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup broccoli florets
- 1 cup snap peas or snow peas, ends trimmed
- 1 medium carrot, julienned or thinly sliced
- 1/2 cup sliced mushrooms (optional)
- 3-4 green onions, sliced
- Sesame seeds for garnish (optional)
- Cooked rice or noodles for serving
For the Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sugar
- 1/4 cup chicken broth or water
Instructions:
- Marinate the Chicken:
- In a bowl, combine the chicken pieces with the marinade ingredients: soy sauce, rice vinegar, sesame oil, cornstarch, and black pepper. Mix well and let it marinate for about 15-20 minutes while you prepare the other ingredients.
- Prepare the Sauce:
- In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sugar, and chicken broth (or water). Set aside.
- Stir-Fry:
- Heat a large skillet or wok over high heat. Add 1 tablespoon of vegetable oil and swirl it around to coat the pan.
- Cook the Chicken:
- Add the marinated chicken pieces to the hot skillet and spread them out in a single layer. Let them cook undisturbed for about 2-3 minutes until they develop a nice sear. Then, stir-fry the chicken until it’s cooked through, about 4-5 minutes. Remove the cooked chicken from the skillet and set it aside.
- Stir-Fry the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the sliced red and yellow bell peppers, broccoli florets, snap peas, julienned carrots, and mushrooms (if using). Stir-fry for 3-4 minutes or until the vegetables are slightly tender but still crisp.
- Combine Everything:
- Return the cooked chicken to the skillet with the stir-fried vegetables.
- Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything evenly and let it simmer for another 2-3 minutes until the sauce thickens slightly.
- Finish and Serve:
- Add the sliced green onions and toss them in the stir-fry.
- Taste and adjust the seasoning if needed.
- Sprinkle with sesame seeds for garnish (optional).
- Serve the chicken stir-fry over cooked rice or noodles.
Enjoy your homemade chicken stir-fry! It’s a versatile dish, so feel free to customize it with your favorite vegetables and adjust the sauce to your taste.
