Kheema Stuffed Bell Peppers:
Ingredients:
- 4 large bell peppers (any color of your choice)
- 1 lb (450g) ground meat (beef, lamb, or chicken)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 tomatoes, finely chopped
- 1/2 cup frozen peas
- 1/2 cup carrots, finely diced
- 1/2 cup potatoes, finely diced
- 1/2 cup green beans, finely chopped
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Cooking oil
- Fresh cilantro leaves for garnish
Instructions:
- Prep the Bell Peppers:
- Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set them aside.
- Prepare the Filling:
- In a large skillet, heat a few tablespoons of cooking oil over medium heat.
- Add the chopped onions and sauté until they become translucent.
- Add Aromatics:
- Stir in the minced garlic and ginger and cook for another minute until fragrant.
- Cook the Meat:
- Add the ground meat (kheema) to the skillet and cook, breaking it apart with a spoon, until it’s browned and cooked through.
- Spices and Tomatoes:
- Add the cumin powder, coriander powder, garam masala, red chili powder, and salt to the meat mixture. Mix well.
- Add the chopped tomatoes and cook until they soften and the mixture thickens.
- Add Vegetables:
- Stir in the frozen peas, finely diced carrots, potatoes, and chopped green beans.
- Cook the mixture until the vegetables are tender, and the flavors meld together. Adjust salt and spices to taste.
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Stuff the Bell Peppers:
- Carefully stuff each bell pepper with the kheema and vegetable mixture, pressing it down gently to fill the peppers evenly.
- Bake:
- Place the stuffed bell peppers in a baking dish and cover it with foil.
- Bake in the preheated oven for about 30-35 minutes or until the peppers are tender.
- Serve:
- Once done, remove the foil and garnish the stuffed bell peppers with fresh cilantro leaves.
