  • 4 medium zucchinis, grated

  • 5 large eggs
  • 1 cup grated cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh herbs (such as basil, parsley, or dill)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch (23×33 cm) baking dish or a similar-sized ovenproof dish.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This will help prevent your slice from becoming too watery.
  3. In a large mixing bowl, combine the grated zucchini, chopped onion, self-raising flour, vegetable oil, and eggs. Mix well until all the ingredients are fully combined.
  4. Add the grated cheddar cheese, grated Parmesan cheese, and chopped fresh herbs to the mixture. Season with salt and pepper to taste. Stir until everything is evenly distributed.
  5. Pour the zucchini mixture into the prepared baking dish, spreading it out evenly.
  6. Bake in the preheated oven for approximately 35-40 minutes, or until the top is golden brown and the slice has set in the middle. You can check for doneness by inserting a toothpick into the center; it should come out clean when it’s ready.
  7. Once cooked, remove the zucchini slice from the oven and allow it to cool slightly before slicing it into squares or rectangles.
