- 4 cloves of garlic
- 1-inch piece of ginger
- 2-3 green chilies (adjust to taste)
- 1 small onion, chopped
- 2 tablespoons gram flour (besan)
- 1 teaspoon turmeric powder
- 1 teaspoon paprika or red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 tablespoon vegetable oil
- Salt to taste
For the Soup:
- 200g thin rice noodles, cooked according to package instructions
- 400ml coconut milk
- 2 cups vegetable or chicken broth
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced
- 1 teaspoon turmeric powder
- 1 teaspoon paprika or red chili powder
- 1 tablespoon fish sauce (optional)
- 1 tablespoon soy sauce
- Salt to taste

Instructions:
- Prepare the Khow Suey paste: In a blender or food processor, blend together garlic, ginger, green chilies, and chopped onion until smooth.
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the gram flour (besan) and toast until golden brown, stirring constantly to prevent burning.
- Add the prepared paste to the skillet along with turmeric powder, paprika or red chili powder, coriander powder, and cumin powder. Cook for 2-3 minutes until fragrant.
- Stir in the coconut milk and vegetable or chicken broth. Bring to a simmer and let it cook for 5-7 minutes, stirring occasionally. Season with salt to taste.
- Meanwhile, heat 1 tablespoon of vegetable oil in another pan. Add sliced onions and sauté until golden brown and crispy. Remove from the pan and set aside.
- To assemble the Khow Suey bowls, divide the cooked rice noodles among serving bowls. Ladle the hot soup over the noodles.
- Garnish each bowl with fried garlic, fried onions, halved boiled eggs, chopped cilantro, and lime wedges. Serve chili flakes on the side for those who prefer extra heat.
- Squeeze lime juice over the soup just before eating. Mix well and enjoy!
