Sri Lankan Chicken Curry:
- Ingredients:
- 1 kg chicken pieces
- 2 onions, sliced
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 tomatoes, chopped
- 2 green chilies, sliced
- 1 sprig curry leaves
- 1 cinnamon stick
- 2 cardamom pods
- 2 cloves
- 1 teaspoon turmeric powder
- 2 tablespoons curry powder
- 1 cup coconut milk
- Salt to taste
- 2 tablespoons oil
- Instructions:
- Heat oil in a pan, add onions, garlic, ginger, green chilies, and curry leaves. Sauté until onions are golden brown.
- Add cinnamon, cardamom, cloves, and tomatoes. Cook until tomatoes are soft.
- Add turmeric powder, curry powder, and salt. Cook for a minute.
- Add chicken pieces and cook until they are sealed and browned.
- Pour in coconut milk and simmer until chicken is cooked through and the sauce thickens.
- Adjust seasoning if necessary and serve hot with rice or bread.
