Sri Lankan Chicken Curry:

  • Ingredients:
    • 1 kg chicken pieces
    • 2 onions, sliced
    • 3 cloves garlic, minced
    • 1-inch piece ginger, minced
    • 2 tomatoes, chopped
    • 2 green chilies, sliced
    • 1 sprig curry leaves
    • 1 cinnamon stick
    • 2 cardamom pods
    • 2 cloves
    • 1 teaspoon turmeric powder
    • 2 tablespoons curry powder
    • 1 cup coconut milk
    • Salt to taste
    • 2 tablespoons oil
  • Instructions:
    1. Heat oil in a pan, add onions, garlic, ginger, green chilies, and curry leaves. Sauté until onions are golden brown.
    2. Add cinnamon, cardamom, cloves, and tomatoes. Cook until tomatoes are soft.
    3. Add turmeric powder, curry powder, and salt. Cook for a minute.
    4. Add chicken pieces and cook until they are sealed and browned.
    5. Pour in coconut milk and simmer until chicken is cooked through and the sauce thickens.
    6. Adjust seasoning if necessary and serve hot with rice or bread.
