Ingredients:
- 1 whole chicken or lamb, cleaned and gutted
- 1 cup yogurt
- 2 tablespoons ginger-garlic paste
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- Bamboo skewers or metal skewers
Instructions:
- In a large bowl, mix together yogurt, ginger-garlic paste, lemon juice, olive oil, salt, black pepper, cumin powder, coriander powder, red chili powder, and turmeric powder to make a marinade.
- Make incisions in the chicken or lamb with a sharp knife. This helps the marinade penetrate deeper into the meat.
- Rub the marinade all over the chicken or lamb, making sure it’s well coated. Cover and refrigerate for at least 4 hours or preferably overnight to allow the flavors to develop.
- Preheat your grill or oven to medium-high heat.
- If using bamboo skewers, soak them in water for about 30 minutes to prevent burning.
- Thread the marinated chicken or lamb onto the skewers, securing it tightly.
- Place the skewers on the grill or in the oven and cook, turning occasionally, until the meat is cooked through and nicely charred on the outside. This typically takes about 45 minutes to 1 hour for chicken and 1.5 to 2 hours for lamb, depending on the size of the meat.
- Once cooked, remove the skewers from the grill or oven and let the meat rest for a few minutes.
- Serve the Balochi Sajji hot with naan bread, rice, or your favorite side dishes.
