Chicken Biryani Recipe: A Flavorful Dish to Delight Your Taste Buds
Ingredients:
For Marination:
- 500 grams chicken, cut into pieces
- 1 cup yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon chili powder
- 1 teaspoon turmeric powder
- Salt to taste
For Rice:
- 2 cups basmati rice, soaked for 30 minutes
- 4-5 cups water
- 2-3 green cardamom pods
- 1 cinnamon stick
- 2-3 cloves
- Salt to taste
For Biryani Masala:
- 2 onions, thinly sliced
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1/2 cup chopped mint leaves
- 1/2 cup chopped coriander leaves
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon garam masala
- 1/2 teaspoon saffron strands, soaked in 2 tablespoons warm milk
- 2 tablespoons ghee or oil
- Fried onions for garnish
Instructions:
- In a bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, chili powder, turmeric powder, and salt. Cover and let it marinate for at least 1 hour, preferably overnight in the refrigerator.
- In a large pot, bring water to a boil. Add soaked basmati rice, green cardamom pods, cinnamon stick, cloves, and salt. Cook the rice until it is 70-80% cooked. Drain and set aside.
- In a separate pan, heat ghee or oil over medium heat. Add cumin seeds and fennel seeds. Sauté until fragrant.
- Add thinly sliced onions and cook until they turn golden brown.
- Add chopped tomatoes and green chilies. Cook until tomatoes are soft and mushy.
- Add marinated chicken pieces along with the marinade. Cook until the chicken is partially cooked and the masala is well combined.
- Layer half of the partially cooked rice over the chicken masala.
- Sprinkle chopped mint leaves and coriander leaves over the rice layer.
- Drizzle half of the saffron milk over the rice.
- Repeat the layers with the remaining rice, mint leaves, coriander leaves, and saffron milk.
- Cover the pot with a tight-fitting lid. Cook on low heat for 20-25 minutes, or until the chicken is tender and the rice is fully cooked.
- Once done, gently fluff the biryani with a fork. Garnish with fried onions.
- Serve hot with raita, salad, and your favorite condiments.
